After the heat of 2024, this was a very kind vintage producing fruit of generosity and balance, with bright natural acidity. The wine is not so overt as some Sauvignon Blancs can be but still offers a combination of guava and gooseberry with a citrusy melon character and just a faint touch of finishing cut grass herbaceousness for balance. Clean, crisp, with good flavour intensity.

Machine harvested Sauvignon Blanc fruit was pressed and underwent solids flotation before being racked to stainless steel tank with low solids for fermentation. A cool ferment was carried out to maximise varietal character and freshness. Racked off lees as soon as ferment was completed.
