From the Vineyard –
January is all about canopy management. Shooting thinning, removing water-shoots and hedging are techniques that we use to improve vine balance. We are aiming for an open canopy, which provides good leaf and fruit exposure to the sun, improves air flow and reduces the potential for bunch rots and mildews.
Grapevines require enough leaf area to ripen the fruit and produce a desired fruit quality, without the canopy being so dense that fruit is shaded or disease encouraged.

Single Vineyard 2021 Chardonnay
Slashing the 90’s stigma of West Australian Chardonnay this wine has zingy acid and a vibrancy that keeps you topping up your glass. This Chardonnay is generous and rich on the front palate. Melon, white peach, and honeysuckle fill your mouth making you wonder where your crayfish is. It holds gentle structure and has a crisp lively finish.
